This guidance document is a brochure version of the FSIS Best Practices Guidance for Controlling Listeria monocytogenes (Lm) in Retail Delicatessens. The guidance document provides best practice tips for delicatessen operators. Topics discussed are Listeria monocytogenes (Lm), listeriosis, cleaning and sanitizing, product handling, employee practices, and facility and equipment controls. It relates to 21 USC 623(d) and 464(e); 9 CFR 303.1(f), 381.10(d)(4), 303.1(d)(1), and 381.10(d)(1).
