1 FSIS test results for the 6 target non-O157 STECs appear for only samples of beef manufacturing trimmings from cattle slaughtered on-site on or after June 4, 2012. At this time, only beef manufacturing trimmings (defined as trimmings that are intended for use in raw ground beef or beef patty products produced at the slaughter plant) and not other components (such as bench trim, or other components of ground beef such as cheek meat and head meat) are eligible for testing for non-O157 STEC.

4 Serotypes reported in this table are adulterant STECs. FSIS considers E. coli O157:H7 and the top six non-O157 O groups (O26, O45, O103, O111, O121, and O145), that also cotain the stx and eae genes, as adulterants.

Number Positive and Percent Positives on this table include all serogroups tested and do not reflect the total number of individual positive samples on the Individual Positives and the non-O157 STEC YTD or CY 2012 tables. This is because one sample may be positive for multiple serogroups.

2012 Annual Report
FSIS made changes to the Shiga toxin-producing E. coli (STEC) sampling program in CY2012. As of January 1, 2012, all domestic establishments entered data into PHIS. By updating product information in PHIS, FSIS was able to construct more accurate sampling frames. On May 1, 2012, FSIS changed traceback instructions and implemented a new statistically redesigned beef manufacturing trimming sample methodology. As a result of these changes, collection rates improved in all of the trim and components programs. New Whirl-Pak® containers were developed to increase the accuracy of the N60 trim, component, and ground beef sample collection. As of June 4, 2012, FSIS began testing beef manufacturing trimmings from domestic and imported product for six non-O157:H7 STECs serogroups—O26, O45, O103, O111, O121, and O145—on domestic and imported raw ground beef component samples. In addition, OPHS developed guidance for establishments for the selection of commercial or private microbiological testing laboratories.
FSIS determined the percent positives for E. coli O157:H7 for the following sampling programs and product classes in CY2012:
- Routine verification testing for domestic raw ground beef was 0.16% (19/11,632).
- Imported verification testing for raw ground beef was 0.0% (0/4).
- Routine trim verification for domestic raw ground beef components was 0.65% (15/2,303).
- Routine bench trim verification for domestic raw ground beef components 0.0% (0/832).
- Verification of imported raw ground beef components was 0.94% (7/748).

1 The data presented was obtained from the FSIS internal M2K and LIMS databases and based on sample collection date.
2 Definitions, composition, and description of Raw Ground Beef and Raw Ground Beef Component sampling programs (FSIS Directive 10,010.1, PDF Only)
3 FSIS uses product labeling to identify whether the sample source is beef or veal.
4 Definitions of sampling categories
5 Source information for raw ground beef products sampled at retail is not collected.
6 Percent positive: The percent positives shown do not reflect national prevalence for E. coli O157:H7 in raw ground beef/veal or raw ground beef/veal components because the risk-based algorithm used to schedule the sampling is not random and therefore is not representative of the population.
