
Verifying Sanitary Dressing and Process Control Procedures by Off-line Inspection Program Personnel in Poultry Slaughter Operations
The guidance provides information about the FSIS system for verifying that poultry slaughter establishments are performing sanitary dressing procedures in a manner that will prevent the creation of insanitary conditions and the adulteration of products. It applies to official establishments, FSIS supervisory personnel, FSIS inspection program personnel, and all FSIS customers who seek information about the role of sanitary dressing and process control as a part of a poultry establishments food safety system. It relates to 9 CFR Parts 381, 416, and 417.
