FSIS Guideline for Retained Water

This guideline clarifies how establishments can meet requirements to collect and use data to demonstrate the amount of retained water in the product covered by the retained water protocol (RWP) and how to accurately label product to reflect the amount of water retained. It relates to 9 CFR 441.10.
