This guideline provides information about training employees (sorters) to conduct the live animal and carcass sorting and trimming activities required for establishments that voluntarily adopt the New Swine Slaughter Inspection System (NSIS). It applies to NSIS establishments and the actions they make take to sort and remove abnormal or unhealthy animals before FSIS ante-mortem inspection and before FSIS post-mortem inspection. It applies to 9 CFR 309.18 (a)(b) and (c).
