This document provides information about best practices that may be used to prevent, eliminate, or reduce levels of fecal and associated microbiological contamination, specifically STEC and Salmonella contamination in beef (including veal). It applies to small and very small official establishments that slaughter beef and veal and the actions they make take in meeting FSIS regulations. It applies to 9 CFR Part 417.
