This guidance document helps official establishments implement effective sanitary dressing and process-control procedures in veal slaughter establishments. It aims to improve sanitary dressing, antimicrobial intervention implementing, and microbial data in decision-making to reduce Shiga toxin-producing Escherichia coli (STEC) in trimmings produced from veal. This guidance document relates 9 CFR 416 and 417.
