This guideline provides information about the new microbiological sampling and analysis requirements under the 2014 final rule to modernize poultry slaughter (79 FR 49566). It applies to all official small and very small poultry slaughter establishments, except for establishments that slaughter ratites, and the actions they may take to prevent contamination of carcasses and parts by enteric pathogens and fecal material throughout the entire slaughter and dressing operation. It relates to 9 CFR Part 381.
