This guidance guideline provides specific recommendations that official establishments producing post-lethality exposed ready-to-eat (RTE) meat and poultry product may follow to meet the requirements of 9 CFR part 430, the Listeria Rule. It also provides information on sanitation, testing for Listeria monocytogenes (Lm), and prevention of cross contamination of post-lethality exposed, RTE meat and poultry products. It applies to official establishments that produce meat and poultry products. It relates to 9 CFR parts 417 and 430.
