The guidance provides information about the regulatory requirements regarding the production of certain meat and poultry products that have either no retained water or only the amount of water that is an unavoidable consequence of the process, such as data collection protocols, operational control maintenance, and proper labeling. It applies to official establishments that produce raw meat and poultry products and actions they may take to meet the requirements of the Retained Water in Raw Meat and Poultry Products final rule. It relates to 9 CFR 441.10 and 9 CFR Part 412.
