This guidance provides information about Agency verification sampling activities on raw ground beef products and raw ground beef and beef patty components for Escherichia coli O157:H7 (E. coli O157:H7). It applies to official establishments and the actions they may need to take to conduct sampling verification to identify E. coli O157:H7 in raw beef products. It relates to 9 CFR 417.3 (a), 9 CFR 417.3 (b), 9 CFR 416.15, 9 CFR 317.4(a), 9 CFR 317.5(b)(2), 9 CFR 417.5(a)(2), 9 CFR 417.2(a)(1).
