FSIS announced the launch of the Raw Pork Products Exploratory Sampling Program (RPPESP) in April 2015. The goal of the project is to collect data on the presence of Salmonella, other pathogens, and indicator organisms in various pork products.
FSIS collects samples of meat and poultry products to estimate the national prevalence and levels of bacteria of public health concern. Each report is a compilation of data obtained for a particular species or type of animal.
Draft Baseline Study Programs
FSIS will make draft study plans available for review before the official baseline sample collection begins. If concerns are raised, FSIS will assess those concerns before moving forward with the study.

Baseline Data Reports
National Antimicrobial Resistance Monitoring System (NARMS) is an interagency program among FSIS, the Agricultural Research Service (ARS), the Food and Drug Administration (FDA), and the Centers for Disease Control and Prevention (CDC), developed to monitor, characterize, and identify trends associated with antimicrobial resistant bacteria in meat and poultry products, retail meat, and humans.
On October 17, 1994, FSIS began a microbiological testing program to detect Escherichia coli O157:H7 in raw ground beef. The objectives of the testing program have evolved over time. An original objective was to stimulate industry testing and other actions to reduce the presence of the pathogen in raw ground beef.
Today, FSIS considers product sampling to be one of several activities conducted to verify the effectiveness of HACCP systems. Since the initiation of the FSIS testing program, many grinders and suppliers of raw ground beef components have instituted programs to routinely test their ground beef products or raw materials used in ground beef products for E. coli O157:H7.

Serotyping of Salmonellae from Meat and Poultry Products
