Compliance Guideline for Minimizing the Risk of Shiga Toxin-Producing Escherichia coli (STEC) in Raw Beef (including Veal) Processing Operations

The guidance provides information about the adulterant status of STEC in beef products, supportable control measures for STEC, the use of grinding logs to track products, and procedures for responses to positive STEC sample results.  It applies to official establishments that produce non-intact and intact cuts intended for raw non-intact beef products and actions they may take to ensure the intended functioning of their food safety programs, including the reduction of STEC to below detectable levels.  It relates to 9 CFR 317.2, 417.2, and 417.5.
