The guidance provides information about validated cooking instruction requirements for labels on mechanically tenderized beef products.  It applies to official establishments that manufacture mechanically tenderized beef products and actions they may take to ensure that the labels destined for household consumers, hotels, restaurants, or similar institutions contain required validated cooking instructions.  It relates to 9 CFR 317.2(e)(3)(iii).
