This guidance document provides official establishments with an informational resource on pre-harvest management controls and interventions for reducing Shiga toxin-producing E. coli (STEC) shedding in beef cattle production. In September 2011, FSIS declared six additional STEC strains adulterants in beef.  It relates to 9 CFR 417.2.
