Compliance Guideline for Establishments Sampling Beef Trimmings for Shiga Toxin-Producing Escherichia coli (STEC) Organisms or Virulence Markers

The guidance provides information about procedures for testing for STEC organisms (or virulence markers) using the N60 sample collection method on beef manufacturing trimmings.  It applies to official establishments that slaughter or fabricate beef and their ongoing activities to ensure the intended functioning of their food safety programs.  It relates to 9 CFR 417.2 and 417.4.
