This guidance document helps official establishments that produce ready-to-eat (RTE) meat or poultry products exposed to the processing environment after application of the basic lethality procedure (e.g., cooking) to comply with the requirements of the FSIS Listeria interim final rule.  This guidance document relates to 9 CFR 430.
