USDA Recall Classifications

Class I - High or Medium Risk
This is a health hazard situation where there is a reasonable probability that the use of the product will cause serious, adverse health consequences or death.
Class II - Low Risk
This is a health hazard situation where there is a remote probability of adverse health consequences from the use of the product.
Class III - Marginal Risk
This is a situation where the use of the product will not cause adverse health consequences.

WASHINGTON, 19 de mayo del 2014 – Wolverine Packing Company, un establecimiento localizado en Detroit, Mich., está retirando del mercado aproximadamente 1.8 millones de libras de productos de carne de res que pudieran estar contaminados con E. coli O157:H7, anunció hoy el Servicio de Inocuidad e Inspección de Alimentos del Departamento de Agricultura (U.S. Department of Agriculture’s Food Safety and Inspection Service -- FSIS por sus siglas en inglés). 

Los productos de carne de res fueron producidos en el 31 de marzo del 2014. Para la lista completa de productos incluidos bajo esta retirada use como referencia el documento aquí incluido. 

Los productos sujetos a esta retirada portan el sello de establecimiento “EST. 2574B” dentro de la marca de inspección de USDA y también portan un código de producto con el formato “Packing Nos: MM DD 14” y fechas entre “03 31 14” y “04 18 14.” Estos productos fueron distribuidos para uso en restaurantes en Massachusetts, Michigan, Missouri y Ohio. Estos productos no fueron distribuidos al Departamento de la Defensa (Department of Defense), el Programa Nacional de Almuerzos Escolares (National School Lunch Program), o ventas por catalogo/internet.

Algunos factores que han contribuido al la suma total de producto incluido en esta retirada se debe a la probabilidad de contaminación de productos adicionales debido a la falta independencia microbiológica entre distintos lotes de estos productos, así como también a la carencia de reportes de antecedentes adecuados.

La oficina de FSIS fue notificada acerca de una racha de enfermedades relacionadas con E. coli O157:H7 el 8 de mayo del 2014.  Trabajando en colaboración con miembros asociados de la salud pública del Centro para el Control y Prevención de Enfermedades (Center for Disease Control and Prevention -- CDC por sus siglas en inglés) FSIS determinó que existe una correlación entre productos de carne molida de res producidos por Wolverine Packing Company y esta cepa de enfermedades. Basado en investigaciones epidemiológicas y de rastreo, 11 casos de pacientes que muestran los principios de la enfermedad han sido identificados en 4 estados con fechas de padecimientos que van desde el 22 de abril del 2014 al 2 de mayo del 2014. FSIS continúa trabajando junto a otras agencias de salud pública, tanto federales como estatales, durante esta investigación y continuará proveyendo información actualizada tan pronto como esté disponible.

El E. coli O157:H7 es una bacteria potencialmente letal que, entre 2-8 días después de exposición al organismo (3-4 por medio), puede causar deshidratación, diarrea con sangre y calambres abdominales. A pesar de que la mayoría de las personas afectadas mejoran al cabo de una semana, otros individuos pueden sufrir casos de fallo renal, llamado síndrome urémico hemolítico (HUS). HUS puede ocurrir entre personas de cualquier edad pero es más común entre niños menores de 5 años, personas de edad avanzada y aquellos con un sistema inmune comprometido. Los síntomas más comunes de HUS lo son la contusión fácil de tejidos, palidez, y disminución en el flujo de orina. Toda persona que experimente estos síntomas debe buscar atención médica inmediatamente.

FSIS conduce rutinariamente cotejos de efectividad para asegurarse que se estén tomando los  pasos necesarios para asegurarse que el producto no esté disponible a los consumidores.  Conforme esté disponible, un(os)  listado(s) de distribución serán colocados en la página de internet del FSIS en: http://www.fsis.usda.gov/avisos.

FSIS les aconseja a los consumidores que solo consuman productos de carne de res, ya sean frescos o congelados, que hayan sido cocinados a una temperatura de por lo menos 160° F. La única forma asegurarse de que el la carne molida de res ha sido cocida a una temperatura lo suficientemente alta para matar bacterias dañinas es usando un termómetro para medir la temperatura interna del alimento, http://1.usa.gov/1cDxcDQ.

Enjabónese y lávese  las manos con agua tibia al menos por 20 segundos antes y después de manejar carnes y aves crudas. Lave las tablas de cortar, platos y utensilios con agua caliente con jabón.  Limpie su cocina inmediatamente luego de preparar carnes y aves.

Mantenga las carnes, aves y pescados crudos lejos de otros alimentos que sin cocinar.  Use una tabla de cortar para carnes, aves y productos de huevo crudos y otra diferente para alimentos cocidos.

El color de las carnes no es un indicador seguro de que estas han sido cocidas a temperaturas lo suficientemente altas como para matar bacterias dañinas. La única forma de asegurarse que las carnes y loas aves han sido cocidas a temperaturas lo suficientemente altas como para matar bacterias dañinas es usando un termómetro de comidas para medir la temperatura interna de dichas carnes:

  • Pescado: 145°F
  • Filetes/chuletas/asados de carne de res, cerdo o borrego: 145°F seguido por tres minutos de descanso
  • Carne molida: 160°F
  • Aves: 165°F
  • Salchichas: 160°F o hasta que estén  humeando.

Refrigere las carnes y aves crudas a no más de dos horas de haberlas comprador o una hora si la temperatura ambiental sobrepasa los 90 º F.  Refrigere las carnes y aves cocidas a no más de dos horas de haberlas cocinado.
