Workshop: Control of Listeria monocytogenes in Ready-to-Eat Meat and Poultry Products
| FSIS held five interactive workshops to help small and very small plants prepare for the interim final rule "Control of Listeria monocytogenes in Ready-to-Eat Meat and Poultry Products." The provisions of the rule, which were implemented on October 6, 2003, require official establishments that produce certain ready-to-eat (RTE) meat and poultry products to take additional steps to control product adulteration from Listeria monocytogenes. The workshops were held on the following dates:
