Compliance Guidelines for Controlling Salmonella in Market Hogs Now Posted

Today, a Federal Register notice announcing the availability of an FSIS compliance guideline for hog slaughter establishments was placed on public display by the Office of the Federal Register. The notice will publish in the Federal Register on Mon., Jan. 6, 2014. It can be found at http://www.ofr.gov/OFRUpload/OFRData/2013-31488_PI.pdf.

The guidance provides information on best practices that may be applied at a hog slaughter facility to prevent, eliminate, or reduce levels of Salmonella on hogs at all stages of slaughter and dressing.  FSIS is issuing this guideline because pork has recently been implicated in a number of outbreaks of salmonellosis. The guidance is posted at http://www.regulations.gov/#!documentDetail;D=FSIS-2014-0002-0001. FSIS is issuing this guidance pursuant to the agency’s Salmonella Action Plan posted at Salmonella Action Plan. The plan lists a number of actions FSIS intends to take to reduce Salmonella-related illnesses from FSIS regulated products, including pork products.

This guide represents the agency’s current thinking, and FSIS encourages hog slaughter establishments to begin using it. FSIS is providing 60 days for public comment, and the guidance document may be updated in response to the comments that FSIS receives. Comments on the guidance may be submitted by either of the following methods:
