Guidance document issued to provide criteria to establishments producing meat, poultry and processed egg products for selecting a commercial or private laboratory to analyze establishment samples.

grinder Sanitation Guidance for Beef Grinders (Updated Jan 6, 2012; PDF Only)
FSIS is offering this guidance to retail firms and federally-inspected establishments that produce raw ground beef products. The format/design of the guidance material is not of importance. The information captured in the drafts provided will enable FSIS and our other food safety partners to conduct effective traceback of suspect products.
