On behalf of the USDA Food Safety and Inspection Service E. coli O157:H7 risk assessment team, I’m pleased to have this opportunity to summarize the draft findings of the FSIS risk assessment of E. coli O157:H7 in ground beef. My presentation today will cover four areas. First, a brief background on the process by which the risk assessment was developed. Second, our best estimate of the magnitude of the public health problem. Third, the process risk model’s predictions regarding the occurrence of E. coli O157:H7 in ground beef production. And finally, the modeled results of some alternative mitigation scenarios. In the interests of time, during my presentation I will refer to E. coli O157:H7 simply as O157.
