Pathogen Reduction/HACCP & HACCP Implementation

To determine if the objectives stated in the Preamble of the Final Rule are being met.
Do HACCP processing control systems:
To determine if the Government Performance and Results Act objectives stated in the FSIS Strategic Plan are being met.
To provide information to facilitate HACCP implementation
Studies planned over the next three years:
Foodborne Illness and Hazard Studies will assess changes in foodborne illness related to meat and poultry and changes in levels of biological, physical, and chemical hazards in meat and poultry since the implementation of PR/HACCP.
Domestic and International Industry Impacts will determine the effect of PR/HACCP farm-to-table initiatives on the structure and performance of the beef, pork, and poultry industries and on the ability of U. S. companies to export and import beef, pork, and poultry.
Consumer Knowledge, Behavior, Confidence, and Education studies will evaluate the impact of PR/HACCP farm-to-table initiatives on changes in consumer knowledge, behavior, and confidence for general and selected high-risk consumers. These studies will also determine effective consumer food safety messages and delivery mechanisms.
Animal Production Food Safety Education studies will determine the impact of PR/HACCP farm-to-table initiatives on animal production practices and on the effectiveness of the FSIS Animal Production Food Safety (APFS) Program in fostering state partnerships to improve production practices.
In-Distribution Food Safety studies will evaluate the impact of PR/HACCP farm-to-table initiatives on changes in meat and poultry food safety practices during transportation, distribution, and retail.
Farm-to-Table Resource Management study will develop an FSIS Headquarters software tool to facilitate risk-based decision-making and planning.
