FSIS undertook two quantitative microbial risk assessments to assist FSIS risk managers in evaluating egg handling and pasteurization performance standards for reducing the likelihood of Salmonella enterica serovar Enteritidis (SE) contamination in shell eggs and Salmonella spp. contamination in egg products.
