egg product plants need access to more resources to improve their food safety and food defense systems.
Therefore, FSIS is offering educational webinars on six topics to small and very small plant owners
and operators that will help them with this initiative. FSIS employees are welcome to attend these seminars.

Issues Regarding Effective Microbiological Testing For E. Coli O157:H7 For Small And Very Small Plants | Register
This webinar will focus on the development of effective microbiological testing programs for small and very small
processing plants. FSIS testing will be discussed as well as testing methods for N60, which meet
USDA expectations and guidelines. The discussion will also include (1) how microbiological testing programs
fit into an entire food safety system to ensure final product safety; (2) the limitations of microbiological
testing; (3) how to interpret test results; and (4) product handling during pending test results.
Using In-Plant Records to Improve Establishments' Food Safety Systems | Register
This webinar will focus on the importance of an active data analysis system
to ensure recognition of trends that could indicate a change in food safety
status or risk. While monitoring records are often the result of rapid and on-line
measurement tools, data generated from examples of monitoring will be reviewed
to ensure seasonal or longer term trends in food safety, which can be identified,
and appropriate responses to improve establishments' food safety systems.

In-Plant Validation of Food Safety Interventions in Beef Products | Register
This webinar will present methods of determining the effectiveness of food safety interventions in small and very small beef
products establishments. The topics covered in this webinar will include basic objectives of in-plant validations,
design of experiments, methods to achieve objectives, and the interpretation of results. At the conclusion of the
webinar, an establishment should have the basic tools to determine the expected outcome of their existing
interventions and use the information to strengthen their HACCP plans.

Selecting Scientific Documentation to Support Establishments' HACCP Plan | Register
With the introduction of USDA-FSIS HACCP, meat and poultry processors have the requirement to provide
supporting documentation for all HACCP decisions. These decisions in hazard analysis, critical control
points, monitoring, validation, etc. utilize scientific documentation. A continual challenge for very
small and small plants is locating and selecting appropriate scientific documentation that supports
their individual HACCP decisions. Because each HACCP plan is unique, there is no single 'right way'
for making these decisions. The objective of this webinar is to present a series of examples that
will illustrate proper selection of scientific documentation and highlight available resources to aid in these decisions.

Selecting and Maintaining Effective GMPS for an Effective Food Safety System | Register
This webinar will identify which Good Manufacturing Practices (GMPs) and Sanitation Performance Standards
(SPSs) are important and necessary as a foundation to support a small plant's food safety system
and how to write, implement, maintain, and monitor the effectiveness of the programs.
Generic Standard Operating Procedures (SOPs) for a variety of GMPs/SPSs will be shared
and discussed along with checklists to monitor the plant's compliance with their standards.
