FSIS Informs Consumers of Potentially Unsafe Sausage Products

WASHINGTON, June 23, 2000 -The U.S. Department of Agriculture's Food Safety and Inspection Service today announced
that products from the Santos Linguisa Factory, a San Leandro, Calif., processor of specialty Portuguese sausages,
may have been underprocessed, prepared under insanitary conditions, or produced without federal inspection.
Products which are underprocessed — not cooked at a high enough temperature — may pose a food safety risk
to consumers. Without inspection, FSIS cannot make a determination if product is safe for human consumption.
The packages carry "EST. 8279" inside the USDA mark of inspection, and have been distributed to retail
stores and restaurants, as well as through mail order. Labels bearing the marks of inspection may have been used
without authorization.
"Because of the risk of unsafe food, we urge consumers who may have the product not to eat it," said
Thomas J. Billy, FSIS administrator.
Consumers or retailers who purchased the product directly from the company should contact FSIS District Enforcement
Operations, (202) 418-8874. Other consumers should return the product to the point of purchase.
Under the Federal Meat Inspection Act, FSIS has the authority to detain, and take action against, any product that the
agency has reason to believe is adulterated or misbranded, and unfit for human consumption.
