FSIS Verification Activities for Production of Not Ready-To-Eat Comminuted Poultry Products
The comment period for the Federal Register notice (Docket-FSIS-2012-0007) closes on Monday, April 22, 2013.
Soon after this date the Agency will issue an FSIS notice to field personnel instructing them on when, and
how to, begin verifying that plants that produce raw ground or comminuted chicken and turkey have
reassessed their HACCP plans for these products.
After the comment period ends, FSIS will review and consider comments that the Agency receives on sampling
of comminuted poultry product. Based on the comments and the Agency's expertise on developing sampling
programs, FSIS will issue a second FSIS notice to its field personnel that contains instructions on when
to begin sampling comminuted chicken and turkey products and the procedures for doing so.
The Agency will use results from the exploratory sampling program to inform development of future performance
standards for comminuted chicken and comminuted turkey. Exploratory sampling will last for at least three
months.
