WASHINGTON, August 13, 2004 - The U.S. Department of Agriculture's Food Safety and Inspection Service
(FSIS) announced today that the National Advisory Committee on Microbiological Criteria for Foods (NACMCF) will hold public
meetings August 24-27, 2004.
The full committee will discuss performance standards for ground chicken/ground turkey, the scientific basis for establishing
safety-based "use by" date labels for refrigerated ready-to-eat foods and scientific criteria for redefining pasteurization.
All meetings are open to the public and will be held at the Hotel Monaco, Athens Room, 700 F Street, NW, Washington, DC.

The full committee will meet Friday, Aug. 27 from 8:30 a.m. to 5 p.m. Three NACMCF subcommittees will meet prior to the full
committee meeting. The Performance Standards for Ground Chicken/Ground Turkey Subcommittee will meet Aug. 24 from 8:30 a.m.
to 5 p.m. and on Aug. 25 from 8:30 a.m. to noon. The Scientific Criteria for Redefining Pasteurization Subcommittee will
meet Aug. 25 from 1 p.m. to 5 p.m. The Scientific Basis for Establishing Safety-Based "Use By" Date Labeling for Refrigerated
Ready-to-Eat Foods Subcommittee will meet August 26 from 8:30 a.m. to 5 p.m.
The NACMCF was established in 1988 to provide scientific advice and recommendations to the Secretary of Agriculture
and the Secretary of Health and Human Services on public health issues relative to the safety and wholesomeness of
the U.S. food supply. The committee formulates positions on the development of microbiological criteria, the review
and evaluation of epidemiological and risk assessment data and methodologies for assessing microbiological hazards in
foods. The Committee also provides advice to the Centers for Disease Control and Prevention and the Departments of
Commerce and Defense.
