Key Personnel Appointments Made at FSIS
On December 1, Agency Administrator Dr. Barbara Masters named William C. Smith as FSIS Assistant Administrator for the Office of Program Evaluation, Enforcement and Review (OPEER) and Dr. Kenneth Petersen as FSIS Assistant Administrator for the Office of Field Operations (OFO).

Masters also announced that Dr. Jane Roth will remain as deputy assistant administrator for OPEER and that Judy Riggins, currently an executive associate at OFO, will become the OFO deputy assistant administrator.

IKE Preliminary Scenario Available Online
The Technical Service Center (TSC) has made the Preliminary IKE Scenario 06D-05, Verification of Water Activity (aw) In Shelf Stable RTE Jerky Products, available for comment.

This scenario provides clarification to Inspection Program Personnel regarding the acceptability of Water Activity (aw) criteria which are different from those addressed in the Compliance Guidelines for Meat And Poultry Jerky Produced By Small and Very Small Plants (PDF Only), dated December 2004 and the Compliance Guidelines to Control Listeria monocytogenes In Post-Lethality Exposed Ready-To-Eat Meat and Poultry Products (PDF Only), dated October 2004.

Reminder for Public Amenability Meeting
A public meeting to discuss possible changes to the jurisdiction over certain foods that contain meat and poultry will be held by FSIS and the U.S. Department of Health and Human Services' Food and Drug Administration (FDA) from 10 a.m. to 4 p.m. December 15 at the Donald E. Stephens Convention Center, 5555 North River Road, Rosemont, Ill. Amenability is the only issue that will be discussed at this meeting.

Seating is limited. Anyone wishing to attend is encouraged to register in advance at http://register.grad.usda.gov/

Those who plan to attend and submit comments at the meeting are encouraged to notify FSIS at the time of registration.

Puerto Rico Webcast Reminder
The University of Puerto Rico-Mayaguez will host a webcast on December 9, 2005, to address food defense topics and concerns that affect the U.S. meat, poultry, egg product and import industry.

Viewers from across the country can login to www.uprm.edu and watch a live interactive classroom webcast of UPRM officials instructing Puerto Rico's FSIS inspectors, small and very small establishment owners, and industry representatives.

This webcast is a result of an April 2005 announcement by Secretary Mike Johanns for meat, poultry and egg plants to adopt model food defense plans and take training on how to strengthen security measures and prevent potential acts of intentional contamination. The food defense plans were created to guide the development and implementation of food defense plans for meat, poultry and egg processing facilities, import establishments and identification warehouses.

Reminder for Bauman Award Nominations
FSIS is accepting nominations for the 2005 Howard E. Bauman award.
b The award is the highest food safety honor presented by FSIS, and recognizes one or more individuals who have exhibited leadership and a longstanding commitment to improving food safety and protecting public health.

Nominees must be U.S. citizens and only one nomination per person or organization will be considered. Nominations for the award must be received no later than December 5.

FSIS Gives Tips to Cook Holiday Meats
While the holiday season is often turkey time for many, FSIS is providing on its Web site information about preparing various other holiday meats.

The information includes tips for selecting and preparing beef, lamb, pork, veal and poultry, as well as wild game.
