FSIS To Hold Webinar on Poultry Sanitary Dressing
Procedures
The agency will be conducting a webinar on Nov. 8 at 11 a.m.
(ET) for industry audiences, that will focus on verification
of poultry sanitary dressing. The course will also cover
process control procedures by off-line inspection program
personnel in poultry slaughter operations using a systems
approach.
The training will discuss: a “system” as it relates to
sanitary dressing and process control; the role of sanitary
dressing and process control as part of an establishment’s
food safety system. In addition, there will be s discussion
as to how inspectors will verify poultry sanitary dressing
and process control procedures as outlined in Directive
6410.3 which can be found at
www.fsis.usda.gov/oppde/rdad/FSISDirectives/6410.3.pdf.

A Dash of Food Safety in the ‘Taste of DC’
Washington, D.C.’s premier ‘foodie’ extravaganza,
‘Taste of DC,’ brought 30 restaurants together in one place
with food samples, music and entertainment to warm the
hearts of visitors to the nation’s Capital during Columbus
Day weekend.
Partnering with Taste of DC organizers, USDA made the most
of its exposure and provided consumer outreach through the
promotion of FSIS’ culinary demonstrations and the Food
Safety Discovery Zone (FSDZ).
Inside the FSDZ, more than 250 eager families learned about
the core messages of Clean, Separate, Cook and Chill.
Outside the FSDZ more than 5,382 visitors received valuable
food safety information from FSIS Public Affairs

Spanish-Language Virtual Expert Answers Food Safety Questions on Your Smartphone
FSIS’ Spanish-language food safety app is available to
consumers around the clock on their mobile devices. “Mobile
Pregúntele a Karen” is the Spanish-language version of
Mobile Ask Karen, the virtual expert who answers smartphone
users’ questions about properly handling, storing and
preparing food to prevent illness. The English version of
Mobile Ask Karen was launched in May 2011.
Both Mobile Pregúntele a Karen, which is optimized for iOS
and Android devices, and the desktop-based Pregúntele a
Karen are available 24 hours a day at

Consumers can also e-mail, chat with a live representative,
or call USDA’s Meat and Poultry Hotline directly from the
app. To use these features on the app, simply choose

(1-888-674-6854), are available in Spanish and English from
